タイカレー Thai Curry


昨日の夕飯にグリーンカレーココナッツチキンという名前のタイカレーを作りました。グリーンカレーペースト,ココナッツミルク,サツマイモ,かぼちゃ,さやいんげん,鳥肉が入っていて,パクチーを仕上げに乗せてあります。とてもおいしかった~♪

We cooked Thai Curry called Green Curry Coconut Chicken for dinner last night. It's got some green curry paste, coconut milk, sweet potatoes, squash, green beans, chicken, garnished with cilantros. It was so yummy.

Ingredients (serves 4-6)
2 1/2 pounds chicken (bite size)
2 1/2 cups coconut milk
1 3/4 cups chicken broth
12 ounces sweet potatoes (peeled and roughly chopped)
12 ounces winter squash (peeled, seeded, and roughly chopped)
4 ounces green beans (halved)
4-5 TBS green curry paste
1 small bunch fresh cilantro to garnish

1. Place the chiken in a saucepan and pour in the coconut milk and the broth. Simmer for 40 minutes (uncovered. Remove the chicken from the pan.

2. In a large wok, place 1 cup of the liquid and add 4-5 tablespoons curry paste according to taste. Add chicken, sweet potatoes, squash, green beans and remaining liquid, and simmer for 10-15 minutes or until the potatoes are cooked (put the lid on). Serve garnished with cilantro.

We used store bought already cut squash and it just worked fine. Also, it took more than 15 minutes for sweet potatoes to cook. You might want to try to cook with higher heat or cook a little longer. If you don't have a wok, a huge pot will work I think (I personally think a regular pot would work better than a wok).
